UVA 43 is our in house red wine yeast for our 2020 Cabernet and Sangiovese. These particular juices are BIG with lots of sugar and the UVA 43 does a fantastic job of bringing balance to such juices.
- Has a high alcohol tolerance of up to 18%
- Develops notes of red fruit and cherry characteristics. Maintains colour and imparts high quality sensory results.
- Temperature Range: 13°C-35°C
- Notable for its powerful ability to restart stuck of sluggish fermentations.
